Lemon Cheesecake Protein Cookies

Ingredients:
- ½ cup Vanilla Protein Powder, Whey-casein, 45g
- ⅓ cup Coconut Flour, 37g
- ¼ cup AP Flour, 30g
- 1 Tbsp Lemon Zest
- ¾ tsp Baking Soda
- ½ cup Unsweetened Applesauce, 120g
- 2 Tbsp Lemon Cheesecake Cashew Butter, 28g
- 1 Tbsp Zero Calorie Brown Sugar Alternative, 12g
- 1 Egg, Room temperature
- 1 Tbsp Lemon Juice
- 2 Tbsp Reduced Fat Cream Cheese, 28g
- 2 Tbsp Nonfat Plain Greek Yogurt, 28g
- ½ scoop Vanilla Protein Powder, Whey-casein, 15g
- 1 Tbsp Lemon Cheesecake Cashew Butter, 14g
- Stevia Sweetener, 1 tsp sugar-worth
- Preheat oven to 350°F and line baking sheet with parchment paper.
- In a bowl combine protein powder, coconut flour, flour, lemon zest and baking soda.
- In another bowl, whisk applesauce, Lemon Cheesecake Cashew Butter, brown sugar, egg and lemon juice.
- Add dry mix into wet and gently fold until uniform.
- Divide mixture into 8, roll into balls and place on baking sheet (keep 2” space between each). Slightly flatten into shape.
- Bake about 8–10 minutes. Transfer to cooling rack to cool completely.
- In a bowl, combine softened cream cheese, Greek yogurt, protein powder, Lemon Cheesecake Cashew Butter and sweetener.
- Spread on top of cookies.
