Lemon Cheesecake Protein Cookies

Ingredients:
  • ½ cup Vanilla Protein Powder, Whey-casein, 45g
  • ⅓ cup Coconut Flour, 37g
  • ¼ cup AP Flour, 30g
  • 1 Tbsp Lemon Zest
  • ¾ tsp Baking Soda
  • ½ cup Unsweetened Applesauce, 120g
  • 2 Tbsp Lemon Cheesecake Cashew Butter, 28g
  • 1 Tbsp Zero Calorie Brown Sugar Alternative, 12g
  • 1 Egg, Room temperature
  • 1 Tbsp Lemon Juice
Cheesecake Topping:
  • 2 Tbsp Reduced Fat Cream Cheese, 28g
  • 2 Tbsp Nonfat Plain Greek Yogurt, 28g
  • ½ scoop Vanilla Protein Powder, Whey-casein, 15g
  • 1 Tbsp Lemon Cheesecake Cashew Butter, 14g
  • Stevia Sweetener, 1 tsp sugar-worth
Instructions:
  1. Preheat oven to 350°F and line baking sheet with parchment paper.
  2. In a bowl combine protein powder, coconut flour, flour, lemon zest and baking soda.
  3. In another bowl, whisk applesauce, Lemon Cheesecake Cashew Butter, brown sugar, egg and lemon juice.
  4. Add dry mix into wet and gently fold until uniform.
  5. Divide mixture into 8, roll into balls and place on baking sheet (keep 2” space between each). Slightly flatten into shape.
  6. Bake about 8–10 minutes. Transfer to cooling rack to cool completely.
Cheesecake Topping:
  1. In a bowl, combine softened cream cheese, Greek yogurt, protein powder, Lemon Cheesecake Cashew Butter and sweetener.
  2. Spread on top of cookies.
