Introducing the PB&J Pancake Stack—a playful, protein-packed twist on two all-time favorites.

Whether you’re looking to add some fun to your morning routine or surprise your little one with a delicious lunch, this recipe is easy, customizable, and kid-approved.

💡 PRO TIP: Add 1–2 tablespoons of Greek yogurt to your pancake mix to make them extra fluffy!


🥞 Ingredients

  • 1 serving of pancake mix
    (we used @Pamcakes)

  • Peanut butter of choice (creamy or crunchy)

  • Jam, jelly, or preserves of choice

  • (Optional) 1–2 tbsp Greek yogurt


👩🍳 Directions

  1. Mix your pancake batter as directed on the package. For extra fluffiness, stir in the Greek yogurt.

  2. Cook mini pancakes by dropping small spoonfuls onto a preheated nonstick skillet over medium heat. Flip after 2–3 minutes.

  3. Assemble: Spread peanut butter and jam between each layer of pancakes and stack them up. Use a toothpick to hold them together—perfect for little hands!


📦 Make It Your Own

  • Add fresh sliced bananas or strawberries between layers.

  • Drizzle with honey or maple syrup for a sweet finishing touch.

  • Want to take it on-the-go? Wrap each stack in parchment paper and toss into a lunchbox.
