- 3/4 cup instant oats
- 2 tbsp flax seeds
- 1/4 cup shredded coconut
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup Blueberry Brunch cashew butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 cup dried blueberries
- 1/4 chopped pecans
Method:
- Line a large baking tin with parchment paper
- Mix together all of the dry ingredients except for the blueberries and pecans
- In another bowl, stir together the cashew butter, maple syrup, and vanilla until smooth
- Mix the dry and wet ingredients together well
- Add the dried blueberries and pecans
- Pour the mixture into the baking tin and use the bottom of a glass to flatten it
- Allow the bars to set in the fridge for a minimum of one hour

- Line an 8x8" pan with parchment paper and pour the fudge mixture into the pan
- Put the fudge in the freezer for at least three hours
- When the mixture has set, cut it into squares with a hot knife
